Terry Crawford's Raspberry Soufflè
from the Dark Shadows Celebrity Cookbook
The very beautiful and charming Terry Crawford who was so memorable as Beth Chavez contributed a recipe as lovely as she is to the Dark Shadows Celebrity Cookbook. It is for Raspberry Soufflé and was delightful to prepare. Nothing short of heavenly with the taste of raspberries, these are individual soufflés topped with whipped cream flavored with Framboise liqueur. I could not think of a more romantic and elegant way to end a wonderful dinner for special guests. Like some of the best dishes, this is very simple combining pureed raspberries with whipped egg whites and sugar. They emerge from the oven as light as clouds and melt in your mouth. Be sure to beat your egg whites stiffly, adding the sugar gradually to form shiny peaks, and fold in the raspberry puree gently. They bake in just fifteen minutes and are served warm. While i was enjoying one I began to think that now we know what Beth might have had on that dinner tray she was taking up to Jenny Collins in the tower room when Quentin emerged from the shadows and intercepted her in the hallway. I loved that scene and like you always wondered what was under the napkin on the tray. Isn't it great that the Dark Shadows Celebrity Cookbook offers such adventurous eating along with some possible clues to Collinwood behind-the-scenes as well!
