Mary McKinley Haas' Tomato Quiche
from the Dark Shadows Celebrity Cookbook

Remember back in the early 1980's when Bruce Feirstein published his book, "Real Men Don't Eat Quiche?"  The sociological impact of it at the time was such that some men came out of the closet, while others went back in.  Come to find out, the Dark Shadows Celebrity Cookbook has two great recipes showing that vampires, werewolves, and warlocks have been eating quiche for years, and without any sense of insecurity concerning their image in the least.  Who knew?  Tomato Quiche, offered here by Dark Shadows costume designer Mary McKinley Haas, is one of the best I've ever eaten.  A single pie crust is prepared first. The filling is Swiss cheese, thinly sliced onions, eggs, milk and cream, with sliced ripe tomatoes and fresh herbs on the top.  Baked for about an hour, this utterly delicious and savory tart comes to the table smelling and tasting heavenly.  Believe it or not, it's not too rich either.  The proportions of the recipe are just right and one serving is very reasonable to eat in terms of calories and fat.  I served it with a salad of baby spinach and a light red wine.  This is different from the classic French Quiche Lorraine and offers you an opportunity to really enjoy cooking with fresh tomatoes and herbs, and both blend so beautifully with the Swiss cheese.  A slice of this is all you need for a great meal, and you can easily enjoy it in your TV room while watching one of your new Dark Shadows movie DVD's.
