Donna Wandrey's Danish Onion Soup with Dark Beer
from the Dark Shadows Celebrity Cookbook



The Dark Shadows Celebrity Cookbook offers a number of unusual soups and several of the more distinctive ones are contributed by Donna Wandrey.  Her Danish Onion Soup With Dark Beer intrigued me since I'm a great lover of onion soups and I had never tried a recipe for a Scandinavian version.  The procedure begins with caramelizing the onions in butter, adding the broth (Donna's Basic Chicken Stock), and then pureeing the mixture in the blender.  Dark beer and cream are added along with an egg enrichment to finish.  The color is a very appetizing golden  brown and the flavor is quite rich and hearty.  It's a great meal by itself with bread and a salad.  Beer appears in northern European cooking frequently and turns the chicken broth in this onion soup into something quite substantial.  You'll enjoy it and it's not complicated to make.  Just be certain not to boil the soup after the eggs are added or they will curdle.  When I served it the soup it had the aroma and appearance of a romantic dish from olden days, perhaps like something the Danish fairy tale author Hans Christian Anderson might have enjoyed.
