I needed something to go with the Sharon Smyth's Barbecued Chicken and turned to an tasty sounding recipe for Diana Millay's Flash Corn Pudding in the Dark Shadows Celebrity Cookbook. It goes together quickly with basic ingredients -- whole corn kernels, cream-style corn, eggs, sour cream, and bread crumbs seasoned with salt and pepper. After an hour in the oven it's puffed up, golden brown and ready to serve, meltingly delicious, and moist. There's little or no measuring and hardly any clean-up. I've made corn puddings and spoon breads from scratch that have been light and fluffy, but this quick version is just as good. Be sure you don't over bake it. I thought I knew what Miss Millay meant by "flash" but I was still left wondering. Is it just that you can make it in a jiffy or does she make hers with a flash of the phoenix's magical fire. With the mysterious Diana who knows for sure, but you'll be safe giving this nifty recipe a try whether you use a wand or just a whisk! It went well with the chicken but would accompany many dishes very nicely. Your family will love it.
