Nancy Barrett's Special Omelet
from the Dark Shadows Celebrity Cookbook


Of course, I hoped to find recipes from all my favorite stars in the Dark Shadows Celebrity Cookbook and was curious to see what the wonderful Nancy Barrett enjoys cooking and eating.  It was interesting to learn that Ms. Barrett prefers not to be in the kitchen at all and enjoys dining out instead.  However, I was happy to discover that her one contribution to the book is as lovely as she is.  Her Special Omelet is indeed very special and something you should try.  It's a classic French omelet, but filled with slices of Nova Scotia salmon, or if you prefer, cream cheese and chives.  I chose the cream cheese and chives and it turned out to be a  luscious and meltingly delicious omelet that made a perfect brunch on a rainy Sunday morning.  The salmon would be very nice too, or perhaps a combination of both accompanied with a warm croissant.  But be reminded that as simple as the ingredients are, making omelets can be sensitive and tricky.  You need a good frying pan or omelet pan (perhaps the nonstick type), plenty of butter, and a light deft hand along with a clear sense of timing.  If you're not experienced, practice with a couple and you'll learn very quickly. I think Carolyn must have been good at whipping up these omelets at Collinwood for some of her guests, like Buzz Hackett or Jeb Hawkes maybe, and a quick meal like this was an easy way to manage on Mrs. Johnson's night off.
