Ramse Mostoller's Clam Pie
from the Dark Shadows Celebrity Cookbook






 The Dark Shadows Celebrity Cookbook includes some old fashioned, classic New England dishes like this one for Clam Pie contributed by costume designer Ramse Mostoller.  Known from New Bedford to Eastport, this simple recipe combines tender chopped clams with crushed cracker crumbs and milk, and topped with butter.  Baked for about 40 minutes, the casserole comes to the table piping hot, with a crisp brown crust and a fluffy, creamy interior.  Enjoyed in many homes since the late nineteenth century when Saltines were created, this is also popular in restaurants.  I suspect it was on the menu at either the Collinsport Inn or the Blue Whale (or both).  I made two small ones instead of one large pie, so you can taylor it to your preference without any problem.  It's just right served with a green salad.  And if you are far from here, this dish will give you a taste of the Maine coast in your own home.
