Diana Millay's French Fettucine

French Fettuccine you say? Well, Italian tastes have been making their way into French culture for centuries, and pasta no doubt was brought to France with Catherine de Medici in the late1500's. And the passage of centuries is no problem for a kitchen phoenix like Diana Millay. She offers here a recipe for French Fettuccine in the Dark Shadows Celebrity Cookbook. Try it and you'll see why it's a delectable concoction. Cooked fettuccine is blended with butter, milk, Swiss and cheddar cheeses, chopped ham, and egg yolks. Beaten egg whites are then folded in and the dish is baked to a light golden brown. The entire mixture is somewhat like Italian noodles enveloped in a French soufflé. The recipe says to bake it for a total of 50 minutes, but my oven warranted a baking time of about 35 minutes. Always keep an eye on casseroles containing eggs because they tend to cook fairly quickly and you don't want them to be dry. My guests and I were delighted with it. I served it with steamed asparagus which were a perfect accompaniment, a green salad with tomatoes, and a lightly chilled sparkling rosé. The dinner could not have been nicer and it was an opportunity to enjoy more of Diana's kitchen magic which, like Diana herself never seems to fade.
