Ramse Mostoller's German Pancakes
from the Dark Shadows Celebrity Cookbook

Ramse Mostoller, costume designer for Dark Shadows, shares some of her old world heritage with this recipe for German Pancakes from the Dark Shadows Celebrity Cookbook.  Pancakes like these were familiar to me by other names, one of which was Seattle Dutch Babies, and so I knew it would be delicious and quite a lot of fun to make, as you will see when you try it.  Two eggs, a little milk, flour, and nutmeg are lightly mixed together.  Much of the ease of this recipe comes from the fact that the ingredients should not be thoroughly blended but left lumpy.  Meanwhile, butter heats in a cast iron frying pan in a hot oven until sizzling and then in goes the batter.  Keep a close eye on it!  The recipe says about twenty minutes, but mine was done in just under fifteen.  Yours will vary with your oven.  The pancake puffs up in a beautiful way like a golden cloud.  It's best served right away sprinkled with powdered sugar and fresh lemon juice.  Delicious, and  similar to a popover but better.  Ms. Mostoller suggests that the pancake can be topped with fresh fruit and a splash of your favorite liqueur if you wish making it a sophisticated dessert for guests.  You might try apricots and cherries or pineapple with either Kirsch or Grand Marnier.  Also, it's perfect for a weekend breakfast when you can linger a little longer over that second cup of coffee.
