Marie Wallace's Fillet of Sole

It seems Marie Wallace offers one interesting recipe after another in the Dark Shadows Celebrity Cookbook and her recipe for Fillet of Sole is something you should not miss. Delicate and fresh fillet of sole are wrapped around bundles of steamed asparagus, then baked and bathed with Hollandaise Sauce. The dish is finished for a couple of minutes under the broiler coming out lightly brown and very appetizing. Served with brown rice and a big salad as Marie advises, this is a great dinner that is easy to make in no time, and a nice treat if you are alone or having guests. Your favorite chilled white wine would accompany this perfectly and you could go on to complete the meal with Marie's wonderful chocolate mousse for a dazzling finish. A sophisticated dish like this would probably have appeared on the menu of the Bangor Pine Hotel dining room. Remember when Victoria Winters met Burke Devlin there for dinner? I loved those scenes but was disappointed that Victoria ordered only a grilled cheese sandwich when she might have enjoyed something like this.
It just would have been nice if you had posted the actual recipes with amounts and measures and such. This cookbook is out of print and YOU have it. You post pictures, but no recipes. Not nice
