Marie Wallace's Sautéed Fish Fillets
from the Dark Shadows Celebrity Cookbook












More fresh fish from Collinsport harbor is called for by Marie Wallace in the Dark Shadows Celebrity Cookbook with her simple but delicious recipe for Sautéed Fish Fillets.  I was able to buy fillet of sole right out of the water this afternoon which was perfect for this easy and tasty preparation.  Dipped in milk and lightly dusted with flour, these tender white fillets were sauteed in margarine for a couple of minutes until just golden.  A simple deglazing of the pan with a dash of lemon juice and white wine made an elegant sauce.  Serve this with rice and a green salad and you have another fine and healthy meal from Marie's kitchen.  The best fish recipes are simple ones and this is a good example of a Maine style favorite.
