Marie Wallace's Apple Bread
from the Dark Shadows Celebrity Cookbook
Late summer in New England means that the trees in the orchards are loaded with early McIntosh and Courtland apples. These are some of the most tasty and delicious varieties that we look forward to all year, so we decided to pick our own and try Marie Wallace's recipe for Apple Bread from the Dark Shadows Celebrity Cookbook. It's a well known fact that Ms. Wallace enjoys cooking and good food with an emphasis on healthy ingredients, and her Apple Bread is a good example. The recipe suggests using entirely unbleached flour or a combination of white, whole wheat, or soy flours. I used half unbleached and half whole wheat with fine results. A small amount of margarine, superfine sugar, and two eggs are beaten together after which the other ingredients are folded into the batter. The spices include a good amount of cinnamon and nutmeg, with a nice accent of grated lemon peel to give it an extra lift. I found the blend of flavors to be fabulous and just a little different, rather like Marie herself! I made two small loaves and they baked in about 45 minutes. It was just the thing to do on a rainy day and the end result was quite nice and worth the time and effort
