Marie Wallace's Linguine
from the Dark Shadows Celebrity Cookbook
This recipe is just a short and simple one from Marie Wallace's kitchen notes, but worth mentioning because it's a good one. Next time you are having linguine, serve it with finely chopped garlic gently sauteed in olive oil. You don't need anything else other than Parmesan cheese. I scattered on some chopped parsley and freshly ground black pepper. When the Dark Shadows Celebrity Cookbook was published in 1989, pasta served without tomato sauces was something a bit different although this has always been a popular Italian preparation. An arugula or mixed green salad and favorite wine will be great with this and you can experiment with different olive oils each time you make it.
