Lisa Richards' Low-Cal Chicken Breast
from the Dark Shadows Celebrity Cookbook


The Dark Shadows Celebrity Cookbook contains a sprinkling of very short simple recipes that are equal to some of the longer more elaborate ones and are worth your attention.  Lisa Richards' Low-Calorie Chicken is one.  Skinless chicken breasts are roasted in the oven with a little water and a generous amount of soy sauce. That's it!  The chicken turns out to be tender and juicy and a rich tasting but thin pan sauce is produced if you keep your baking dish covered for most of the 30 minute cooking time.  I served it with brown rice, stir-fried pea pods, and a green salad.  It was a very nutritious low fat  meal in keeping with Lisa Richards' emphasis on extremely healthy cooking as is reflected in her other fine recipes in the book.
