Marie Wallace's Chocolate Mousse
from the Dark Shadows Celebrity Cookbook

Marie Wallace, who everyone knows loves to cook, offers a fantastic Chocolate Mousse to the dessert chapter of the Dark Shadows Celebrity Cookbook.  This is a classic French recipe prepared with eggs, sugar, butter, and dark chocolate with a subtle flavor infusion of coffee and Drambuie liqueur.  Other than melting the chocolate, there is no other cooking involved.  Eggs are beaten separately and folded into the warm chocolate mixture then chilled until firm.  This produces a rich but extremely light textured mousse with an intense and unadulterated chocolate taste.  The coffee and liqueur add a haunting flavor, just right for Dark Shadows as you will see.  You don't need whipped cream to serve with it, but you can indulge if you'd like.  This is a very formal and wonderful dessert but easy to make, and it's perfect for serving to your special guests as Marie says she does in her note to the recipe
