Violet Welles' Avocado Soup A La Fairfax
from the Dark Shadows Celebrity Cookbook


Violet Welles, one of the episode writers for the series, contributed this recipe for Avocado Soup A La Fairfax to the Dark Shadows Celebrity Cookbook and it makes a lovely addition to the interesting soup repertoire in the the book.  This cold soup is simply made in your blender with ripe avocados, chicken broth, half-and-half, and lightly seasoned with a dash of onion salt and white pepper.  A squeeze of lemon juice finishes the dish which is chilled for several hours before serving.  It turns out rather thick and creamy, but is light, velvety,  and delicious.  Named after the town of Fairfax in northern California, this recipe is a good example of elegant California cuisine that creatively uses fresh ingredients native to the region.  If you like avocados, you're certain to enjoy this very different dish which would be great on a summer menu.
