Jack Guilford's Cheese Pancakes

One of my personal favorites from the Dark Shadows Celebrity Cookbook is this one for Cheese Pancakes and I highly recommend them.  They come courtesy of actor Jack Guilford by way of Diana Millay and are quite marvelous.  They are simple to prepare with little or no clean-up.  These little pancakes turn out so light they nearly float off the plate. Moist and tender, they have an intriguingly subtle cheese flavor which is altogether heavenly!  They cook in seconds, so you have to watch them carefully as the recipe advises.  You should choose ricotta cheese as a close relative of pot cheese.  Actual pot cheese is now difficult to find in supermarkets and resembles ricotta or farmer cheese.  The batter also includes matzo meal and sour cream making the pancakes airy, fluffy, and slightly tangy.  Served with strawberries and extra sour cream what could be better?  These pancakes would be delicious with any choice of fresh or frozen berries, honey, syrup, or jam.  I had them for a light lunch, but they would be great for a leisurely weekend breakfast or brunch with a steaming pot of coffee.  You could even imagine you're dining alfresco on the Collinwood terrace in the summertime.
