Diana Millay's Kiley Cake
from the Dark Shadows Celebrity Cookbook





You can always count on Diana Millay's recipes to be interesting  and tempting ones, usually with a different twist as well.  This one for Kiley Cake from the Dark shadows Celebrity Cookbook is quite different in a way, and yet turned out to be the simplest and most delicious of ice-creams.  In fact, Ms Millay has probably invented the original cookies and cream.  Nabisco chocolate wafers are crushed to a powder and mixed with sweet instant cocoa mix.  Heavy cream is whipped stiffly and flavored with orange and vanilla.  The cooky crumb and cocoa mixture is layered with the whipped cream in a square cake pan and then frozen until firm.  It's almost too easy and too much fun!  When do you get to eat mountains of pure whipped cream after all?  Cut into servings and garnished with mandarin oranges this was an elegant dessert--light, not too sweet, refreshing, and a very tantalizing combination of chocolate, orange and vanilla flavors.  I believe this "cake" was named for Diana's son Kiley  who evidently must have liked it very much.  While enjoying it myself, I thought how good it would be flavored with rum the next time I make it, and perhaps I'll call it Kiley's grown up cake.  This delightful recipe is something your family and company would enjoy anytime, summer or winter.  You'll be pleasantly surprised at how much fun it is to make and wonderful to eat.  You'll think it's magic and of course, and like all Ms. Millay's recipes, it is!
