Timothy Gordon's Chocolate Banana Bread
from the Dark Shadows Celebrity Cookbook

The Dark Shadows Celebrity Cookbook was such a popular publication that even ghosts were willing to contribute recipes, as is the case with Timothy Gordon's Chocolate Banana Bread.  Mr. Gordon, who played the role of the ghost of Jeremiah Collins and looked as though he had spent most of his time in Hell's kitchen, offers an interesting and rather healthy recipe that includes oat bran, almonds, yoghurt, and brown sugar along with cocoa and bananas.  Once your ingredients are assembled it's pretty easy to put together and then turning it into a loaf pan.  As always with cakes and breads, don't over this.  Mr. Gordon's recipe recommends an hour but mine was done in about 50 minutes, so keep an eye on yours.  You'll find the texture slightly but satisfyingly coarse and the taste not sweet, but lightly chocolatey underneath the predominant banana flavor.  I thought this was an unusual bread that was good for breakfast with a steaming cup of black coffee and nice for a little dessert as well.  It struck me as a cross between a traditional banana bread and a devil's food cake, and was something that would have appealed to the ghost of Jeremiah who probably did not eat regular meals due to his nightly haunts and daily torments.  It also seems like  something that young people would enjoy eating, perhaps with peanut butter and a glass of milk.
