Sharon Smyth's Barbecued Chicken
from the Dark Shadows Celebrity Cookbook


I'm getting to know more about Sharon Smyth from exploring her great recipes in the Dark Shadows Celebrity Cookbook.  From the nice selection and variety my impression is that her family must enjoy her cooking quite a lot and her dinner guests as well.  Her recipe for Barbecued Chicken for instance is really delicious and, like many of the recipes in the book, is easy to prepare.  The barbecue sauce is an old fashioned home style type, similar to the one I remember my mother making when I was young, and long before the appearance of dry rubs and other exotic grilling sauces presented by TV chefs.  It calls for catsup as a base rather than mustard, and anyone interested in the debate amongst southerners about which is the best barbecue sauce can easily read up on that in a variety of sources. The sauce is blended with plenty of chopped onion and spiked with Worcestershire, lemon juice, and sweetened with brown sugar.  The chicken is first browned on the stove and then gets a bath in the pungent barbecue mixture.  Then it's into the oven for an hour and a half.  The result is tender, succulent chicken that goes well with either potato salad, green salad, or corn on the cob.  The sauce makes this dish truly tantalizing!  You can try it in the winter time if you're in the mood for a summer memory, orhwrwiaw you can take this chicken outside for some patio grilling and chilling.  Where did the recipe come from?  This must have been something that little Sarah Collins picked up on a parallel time trip.  Perhaps Sharon has the answer.
