John Karlen's Maine Lobster
from the Dark Shadows Celebrity Cookbook
















Mr. Karlen is one of my favorite actors and someone with a well known enthusiasm for good food.  He offers his recipe for Maine Lobster in the Dark Shadows Celebrity Cookbook which is a favorite of his.  This makes sense since many people who enjoy good eating usually count lobster among their top choices.  It seems generally to be agreed that Maine produces the finest and most delectable lobsters in the world because of the cold waters and the way the lobstering industry has protected and cultivated them. Whether you're preparing them at home or at the beach, be sure not to cook them for more than fifteen or twenty minutes, otherwise they can become tough and fibrous. In fact, Mr. Karlen recommends taking them out of the pot about a minute early to ensure that they will be moist, succulent, and tender.  Don't forget the melted butter which is de rigueur as an accompaniment for boiled lobster.  Mr. Karlen also notes that an ear of white corn is something he particularly likes with this simple but most satisfying of summer meals, and he should know, since Willie Loomis boiled many lobsters at the old house.  They were always plentiful in Collinsport and easy to cook at a moment's notice.  By the way, I would still like to see that old house kitchen which I'm certain is beyond the louver doors to the left of the fireplace.  We decided not to prepare our lobsters at home tonight, but went down to the Blue Whale for a change and some relaxation.  The lobsters there are as good as you can get, and the music is great too.
