Clarice Blackburn's Pork Chops for Two
from the Dark Shadows Celebrity Cookbook

Since new batches of sauerkraut are appearing in the local farmers' market, I decided it was time to try Clarice Blackburn's Pork Chops for Two from the Dark Shadows Celebrity Cookbook.  It is a simple recipe, but it has some interesting surprises in terms of end results and taste.  Thickly sliced center cut pork chops are seasoned and browned in a skillet.  I used my old Saladmaster electric frying pan for this and it was ideal.  Sliced apple is added to the pan and later about a cup of sauerkraut.  The dish is covered and simmered, turning the chops a few times at five minute intervals.  It couldn't be easier and the chops turn out to be absolutely succulent, golden brown, tender, and juicy.  The sauerkraut is heavenly because the apple completely melts making it slightly sweet and caramelized. I served it with baked sweet potatoes as the recipe suggested, which were very complementary to the chops.  The recipe for two was just right but I found myself scraping the savory drippings from the pan when dinner was over.  You'll do the same, I guarantee!  Remembering when Elizabeth frequently "went over the menu for the week with Mrs. Johnson," there is no doubt in my mind that this satisfying dish would have been a regular specialité de la maison at Collinwood, particularly if Mrs. Johnson had anything to say about it.  Vegetarians should take a night off and give this a try too.  It's well worth it and you'll be quite delighted.
