Sharon Smyth's Baked Flounder Fillets in Sour Cream
from the Dark Shadows Celebrity Cookbook


Sharon Smyth turns her attention to fish in this simple and delicious recipe for Baked Flounder Fillets in Sour Cream from the Dark Shadows Celebrity Cookbook.  I hope you will enjoy it as much as I did.  Be sure to buy fresh flounder fillets from your local fish market.  Flounder is sometimes hard to find but you can substitute fillet of sole for an equally good result.  The fish is baked over a layer of thinly sliced onion and topped with sour cream and paprika to finish under the broiler for a minute or two.  The combination of the delicate fish, subtly flavored with onion and the creamy topping makes this a melt-in-your mouth dish.  (A bit like Sharon's cheesecake recipe , if you recall.)  I served it with steamed fingerling potatoes and a salad for a nice dinner that was light but satisfying and a little different.  You can be sure that this would have been a hit in Collinsport when flounder was coming in from the boats, and something Sarah Collins probably had for dinner at home.
